Delicious sandwich filling
I have very fond memories of my nana packing cheese and onion sandwiches to take with us on outings. Sitting in the park, feeding the squirrels and eating our bread was always a highlight. This cheese and onion sandwich filling is the perfect addition to any picnic! You can even put this into a baked potato. Mmmm…. delicious cheese with scrummy mayonnaise. It’s always a winner. It is also super simple to make and requires very little ingredients. What’s more, this delicious cheese and onion sandwich filling will keep for in the fridge for days!
The fact that this recipe takes mere minutes is fantastic. Personally for myself, I find myself sometimes making this for lunches for both myself and my husband because of how quick it is. Although not often, I want to enjoy laying in bed a little bit longer. And there is nothing better than preparing this filling the night before, quickly slapping up bread and butter and making sandwiches. They are always super filling and really tide myself and my partner over until the end of the day!
Equipment I use
The equipment I use for this cheese and onion sandwich filling? A bowl to mix everything together, a spoon is also helpful to do this. A good quality chopping board and knife will also make quick work of the spring onions and sweet onion. This recipe is honestly child’s play. Finished within 5 – 10 minutes and will give you a tasty filling for days on end!

- Finely dice the sweet onions and chop the spring onions. Put into a bowl and add the grated cheeses.
- Add the mayonnaise to the bowl. Mix to combine. Add more if needed. You want the mixture to be nice and covered.
- Add salt and pepper to taste. Put into the fridge to chill for 30 minutes - 1 hour. Now it is ready to fill sandwiches! However, the filling can be used right away! The filling will keep for 3 - 4 days in the fridge, wrapped in cling film
