Guilty pleasure

Banana Bread has to be one of my ultimate guilty pleasures. I adore it! Having a slice together with coffee (or tea) is sheer bliss. If I ever have any leftover bananas from making smoothies, they will turn into a delicious loaf about 99% of the time. If I feel like quickly wiping up a loaf, this is the classic recipe I always use. However, you can also add walnuts and blueberries to spice things up! 

Equipment I use

When it comes to the equipment I use for making this, it boils down to a few key items. By far my favorite piece of equipment in my house and comes in super handy for baking this bread is my loaf tin. I get so much use out of it. From creating bread to savoury things like my meatloaf. What is also great about this recipe is that no mixer is needed! All you need is a mixing bowl and a spoon and you’re good to go! You can even have the kids get involved mashing up the bananas and stirring everything together. It is super handy to have a set of measuring cups too, however, you can just use a weighing machine. Making banana bread is super simple!

  • Preheat the oven to 175°C.
  • In a mixing bowl, mash the banana until super smushed and smooth. Pour in melted butter and stir to combine.
  • Add the salt and soda and mix. Stir the egg into the mixture and stir to incorporate. Add flour and stir until just combined. (NOTE! If adding extra ingredients, add these when the flour is half mixed in. This allows the ingredients to also get coated with the flour).
  • Butter the inside of a loaf tin. Pour in the mixture and even it out. Bake for 50 minutes to 1 hour or until a toothpick comes out clean from the centre.
  • Take out and leave in the tin for a couple of minutes. Afterward, completely remove the Banana Bread and transfer it to a cooling rack. Cool completely before serving.
